Ingredients - Serves 4-6
- 1 cup polenta
- 1 litre vegetable stock or water with added salt
- 1 tbsp crushed herb of your choice (basil, oregano or mint), optional
- oil, for grilling
Steps
- Place the stock or water in a pot and bring to a boil
- Pour in the polenta in a stream while mixing
- Turn down the heat to medium and cook the polenta while stirring until it becomes thick, like cake batter
- Turn down the heat to low and continue cooking till it is smooth and quite thick (slightly thicker than honey)
- Take it off the heat and pour into a greased tray and spread flat
- Let it cool completely, cut into finger-sized strips
- Grill the polenta fingers until lightly browned on both sides
- Serve hot with aioli or tomato ketchup
