Polenta Fingers

Grilled fingers made of polenta - this is a quick and easy snack or a light meal
Ingredients - Serves 4-6
  • 1 cup polenta
  • 1 litre vegetable stock or water with added salt
  • 1 tbsp crushed herb of your choice (basil, oregano or mint), optional
  • oil, for grilling
  1. Place the stock or water in a pot and bring to a boil
  2. Pour in the polenta in a stream while mixing
  3. Turn down the heat to medium and cook the polenta while stirring until it becomes thick, like cake batter
  4. Turn down the heat to low and continue cooking till it is smooth and quite thick (slightly thicker than honey)
  5. Take it off the heat and pour into a greased tray and spread flat
  6. Let it cool completely, cut into finger-sized strips
  7. Grill the polenta fingers until lightly browned on both sides
  8. Serve hot with aioli or tomato ketchup
