Enchilada Sauce

A spicy and tangy sauce, Mexican style!
Ingredients - Makes 1 cup
  • 2-3 cloves (or 8 g) of garlic, roughly chopped
  • a handful of chillies (use any of your choice, according to how hot you want the sauce to be)
  • 1½ tsp cumin seeds
  • ½ cup passata or tomato sauce for cooking
  • 1 tsp sugar
  • 1 tbsp oil
  • ground black pepper
  • Salt, to taste
Steps
  1. Heat the oil in a saucepan. Fry the cumin seeds and garlic until slightly browned
  2. Add the chillies, passata and the rest of the ingredients and cook for 3 minutes
  3. Thin out the sauce with a little bit of water, if necessary
  4. Use immediately or store in the refrigerator in a closed container for 4-5 days
