Berbere Spice Blend

A staple Ethiopian spice powder
Ingredients - Makes 1 cup
  • ½" piece of cinnamon
  • 4-5 whole cloves
  • 2 tsp cumin seeds
  • ½ tsp whole allspice
  • 1 tsp whole black pepper
  • 1 tsp coriander seeds
  • 1 whole green cardamom seeds
  • 1 tsp fenugreek seeds
  • ½ tsp ground nutmeg
  • ½ tsp turmeric powder
  • 1½ tsp dried basil
  • 1½ tbsp dry ginger powder
  • 3 tbsp red chilli flakes
  • 3 tbsp paprika
  • 2 tsp salt
Steps
  1. Roast all the whole spices on medium heat till they are strongly aromatic. Set aside to cool
  2. Grind to a fine powder
  3. Use a {mortar and pestle} if you are making small quantities. Otherwise, use a {spice mill}, {Indian mixie grinder} or {magic bullet} or something similar. Regular blenders are too large, so they will just toss the contents around instead of grinding them
  4. Mix in the remaining ingredients and store in an airtight container
  5. Use this spice blend to make {Shiro Wat} and other Ethiopian dishes
