Bean Burrito

A lunch favourite - this burrito is spicy, tangy and very satisfying
Ingredients - Serves 8
  • ½ cup uncooked long-grain or medium-grain rice
  • 1X400 g can of kidney beans or black beans, or ½ cup dried kidney beans or dried black beans, soaked overnight and cooked separately
  • 1 cup of avocado, cubed
  • ½ cup cheddar cheese, grated
  • 8 tortilla wraps or any other wraps
  • hot sauce, to taste (try our {Enchilada Sauce})
  • jalapenos, to taste, optional
  1. Cook the rice separately and allow to cool
  2. To make the wraps
    1. Warm the tortilla wraps according to instructions on the package
    2. Place rice, beans, avocado, cheese and jalapenos, in that order, on each tortilla wrap
    3. Top with some hot sauce, wrap them up and serve warm
