Ingredients - Serves 8
- ½ cup uncooked long-grain or medium-grain rice
- 1X400 g can of kidney beans or black beans, or ½ cup dried kidney beans or dried black beans, soaked overnight and cooked separately
- 1 cup of avocado, cubed
- ½ cup cheddar cheese, grated
- 8 tortilla wraps or any other wraps
- hot sauce, to taste (try our {Enchilada Sauce})
- jalapenos, to taste, optional
Steps
- Cook the rice separately and allow to cool
- To make the wraps
- Warm the tortilla wraps according to instructions on the package
- Place rice, beans, avocado, cheese and jalapenos, in that order, on each tortilla wrap
- Top with some hot sauce, wrap them up and serve warm
