Gulab Jamun

Fried milk dumplings in a sweet syrup - a quick version
Ingredients - 60 jamuns
  • For the Jamuns
  • 3 cups milk powder
  • 1 tbsp semolina
  • 1 cup pancake mix
  • Full cream, to make a dough
  • Oil, for deep frying
  • For the syrup
  • 3 cups granulated white sugar
  • 3 cups water
  • 1 tsp green cardamom powder
Steps
  1. To make the syrup
    1. Mix the sugar and water in a large pot and bring to a boil
    2. Turn down the heat, add the cardamom powder and simmer for a few minutes
  2. To make the Jamuns
    1. Mix all the dry ingredients and use enough cream to make a soft dough. Do not knead
    2. Divide the dough into 60 small balls (Jamuns). Apply oil to your hands to keep the from sticking too much
    3. Heat oil in a fryer or a deep pan
    4. Fry the Jamuns until golden brown and keep aside on paper towels for 2-3 minutes
    5. Then place them in the syrup and allow them to soak for a while. They will become soft all the way through. Check one to confirm
    6. Transfer the soaked Jamuns into a different container to make space for the remaining Jamuns
