Basic Fresh Tomato Sauce

The sauce is simple to make and versatile in use. Use on pizzas, mix with pasta or layer in lasagna
Ingredients - Makes 4 cups
  • 1 small onion, finely chopped, or grated
  • 500 g tomatoes, chopped
  • 2 cloves (about 5 g) of garlic, chopped
  • 1 tsp dried oregano
  • 1 tsp red chilli flakes (or dried red chillies, crushed), optional
  • 1 tbsp granulated white or brown sugar
  • 2 tbsp extra virgin olive oil or butter
  • Salt, to taste
  1. Heat oil in a saucepan and fry onions and garlic until the onions are soft. Do not brown
  2. Add everything else and cook till the tomatoes are mushy
  3. Use immediately or store in an airtight container in the refrigerator for a couple of days
