Ingredients - Serves 4
- 400 g spaghetti or any similar pasta
- For the Zigni sauce
- 1 large (or 300 g) onion, chopped
- 4 medium-sized (or 400 g) tomatoes, chopped
- 2 cloves (or 5 g) garlic, chopped
- ½ cup passata or tomato sauce for cooking
- 2 tsp dried oregano
- {Berbere Spice Blend}, to taste
- 2 tbsp oil
- 1 cup water
- Salt, to taste
Steps
- Heat a large pot of water and bring to a boil. Cook the pasta according to instructions on the package
- For the Zigni sauce
- Heat the oil in a saucepan. Fry the garlic and onions till they are soft
- Add the tomatoes and passata and cook till the tomatoes are soft and mushy
- Add the berbere spice blend, oregano and mix well
- Thin out the sauce with a cup of water, season with salt and serve hot with cooked pasta
