Zigni Pasta

A perfect blend of Italian and East African food - pasta served with Zigni sauce
Ingredients - Serves 4
  • 400 g spaghetti or any similar pasta
  • For the Zigni sauce
  • 1 large (or 300 g) onion, chopped
  • 4 medium-sized (or 400 g) tomatoes, chopped
  • 2 cloves (or 5 g) garlic, chopped
  • ½ cup passata or tomato sauce for cooking
  • 2 tsp dried oregano
  • {Berbere Spice Blend}, to taste
  • 2 tbsp oil
  • 1 cup water
  • Salt, to taste
  1. Heat a large pot of water and bring to a boil. Cook the pasta according to instructions on the package
  2. For the Zigni sauce
    1. Heat the oil in a saucepan. Fry the garlic and onions till they are soft
    2. Add the tomatoes and passata and cook till the tomatoes are soft and mushy
    3. Add the berbere spice blend, oregano and mix well
    4. Thin out the sauce with a cup of water, season with salt and serve hot with cooked pasta
