Ingredients - Serves 5-6
- 300 g cherry tomatoes, halved or small tomatoes, quartered
- 5-6 cloves of garlic, whole
- 500 g penne pasta
- 200 g feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- a bunch of fresh parsley, chopped
- Salt, to taste
Steps
- Cook the pasta in a large pot of boiling water, with some added salt
- While the pasta is cooking, heat the oil in a saucepan. Fry the garlic, unpeeled and whole, until the skin starts to peel off
- Add the tomatoes and saute until slightly softened. Turn off the heat, add the pasta, feta cheese and parsley and toss well
- Serve warm
