Penne Pasta With Tomatoes and Feta

A light, fresh and quick summer meal
Ingredients - Serves 5-6
  • 300 g cherry tomatoes, halved or small tomatoes, quartered
  • 5-6 cloves of garlic, whole
  • 500 g penne pasta
  • 200 g feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • a bunch of fresh parsley, chopped
  • Salt, to taste
  1. Cook the pasta in a large pot of boiling water, with some added salt
  2. While the pasta is cooking, heat the oil in a saucepan. Fry the garlic, unpeeled and whole, until the skin starts to peel off
  3. Add the tomatoes and saute until slightly softened. Turn off the heat, add the pasta, feta cheese and parsley and toss well
  4. Serve warm
