Red Lentils Soup

A Turkish staple, this lentil soup is simple, nutritious and oh so yummy!
Ingredients - Serves 4
  • ¾ cup split red lentils (masoor dal)
  • 1 large (or 300 g) onion, chopped
  • 1 tbsp plain flour
  • ¼ cup extra virgin olive oil
  • 3 tbsp passata or 1 tbsp tomato puree
  • ½ tbsp pul biber or red chilli flakes
  • 1 cup milk
  • ground black pepper
  • Salt, to taste
Steps
  1. Heat the oil in large pot. Fry the onions till they are soft
  2. Add the flour and tomato puree (or passata). Mix well. The mixture will become thick almost instantly
  3. Cook while stirring until the oil starts to separate out
  4. Add the lentils, pul biber (or red chilli flakes), and water. Season with salt and ground black pepper
  5. Bring to a boil and then turn down the heat to simmer for 15-20 minutes or until the lentils are almost mushy
  6. Mix in the milk, let simmer for a few more minutes
  7. Blend, if you wish, and serve warm
