Cauliflower Stir-fry

Cauliflower cooked in Indian spices
Ingredients - Serves 6
  • 500 g cauliflower, cut into florets
  • 300 g potato, diced
  • 250 g onion, diced
  • 1 tsp turmeric powder
  • 1½ tsp ground coriander
  • 4 tbsp oil
  • 1 tsp red chilli powder
  • Salt, to taste
  • fresh coriander, chopped, optional
Steps
  1. Heat the oil in a saucepan. Add onions, potatoes and cauliflower and saute for 2-3 minutes
  2. Mix in turmeric, coriander powder and salt and continue cooking uncovered on low heat till the potatoes are done
  3. Mix in red chilli powder and fresh coriander, if using
  4. Serve hot with rice or chapati
