Buab Pud Kai

A Thai stir-fry of loofah and eggs - quick and simple
Ingredients - Serves 4
  • 600 g loofah, peeled and cut into small cubes
  • 2 cloves (or 5 g) garlic, chopped
  • 2 eggs
  • 1 tbsp oil
  • 1 tbsp sesame seeds
  • a handful of thai basil
  • Soy sauce, to taste
  1. Heat the oil in a wok. Add the garlic and sesame seeds and fry till the seeds start to brown
  2. Add the loofah and stir-fry till it is soft
  3. Push to a side and break the eggs into the wok. Scramble them until done and then mix with the loofah
  4. Add the basil leaves and soy sauce, mix well and serve hot with plain rice
