Ingredients - Serves 4
- 600 g loofah, peeled and cut into small cubes
- 2 cloves (or 5 g) garlic, chopped
- 2 eggs
- 1 tbsp oil
- 1 tbsp sesame seeds
- a handful of thai basil
- Soy sauce, to taste
Steps
- Heat the oil in a wok. Add the garlic and sesame seeds and fry till the seeds start to brown
- Add the loofah and stir-fry till it is soft
- Push to a side and break the eggs into the wok. Scramble them until done and then mix with the loofah
- Add the basil leaves and soy sauce, mix well and serve hot with plain rice
