Panzanella

A simple salad to use up leftover bread
Ingredients - Serves 4
  • ½ a loaf of day old bread, torn into small pieces
  • 1 small cucumber, chopped
  • 3 medium-sized (or 400 g) tomatoes, chopped
  • 2 tsp red wine vinegar
  • ground black pepper
  • a handful of basil leaves or chopped dill
  • Salt, to taste
