Banana Bread

A quick and delicious bread (or cake) to use up leftover bananas
Ingredients - Makes a 9" loaf
  • 1 cup walnuts, toasted and roughly chopped
  • 250 g plain flour
  • 150 g granulated white or brown sugar
  • 450 g ripe bananas, mashed well
  • 100 g butter, melted and cooled
  • 2 large (2×55g) eggs, lightly beaten
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
Steps
  1. Preheat oven to 180C or 350F
  2. Butter the bottom and sides of a 9" by 5" loaf pan. Line the bottom with baking paper. You can use a different shaped pan, but you will have to adjust the baking time accordingly.
  3. Combine all the dry ingredients in a large bowl and keep aside
  4. In another bowl, combine mashed bananas, eggs, melted butter, and vanilla extract
  5. Fold the banana mixture into the dry ingredient mixture using a wooden spoon or rubber spatula
  6. Fold only until just mixed; it should be thick and chunky. Too much mixing will result in a tough, chewy bread
  7. Scrape batter into the prepared loaf pan and bake in the oven for 55-60 minutes or until an inserted skewer or toothpick comes out clean
  8. Cool on a wire rack, remove from pan and serve at room temperature
