Ingredients - Makes a 9" loaf
- 1 cup walnuts, toasted and roughly chopped
- 250 g plain flour
- 150 g granulated white or brown sugar
- 450 g ripe bananas, mashed well
- 100 g butter, melted and cooled
- 2 large (2×55g) eggs, lightly beaten
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp vanilla extract
Steps
- Preheat oven to 180C or 350F
- Butter the bottom and sides of a 9" by 5" loaf pan. Line the bottom with baking paper. You can use a different shaped pan, but you will have to adjust the baking time accordingly.
- Combine all the dry ingredients in a large bowl and keep aside
- In another bowl, combine mashed bananas, eggs, melted butter, and vanilla extract
- Fold the banana mixture into the dry ingredient mixture using a wooden spoon or rubber spatula
- Fold only until just mixed; it should be thick and chunky. Too much mixing will result in a tough, chewy bread
- Scrape batter into the prepared loaf pan and bake in the oven for 55-60 minutes or until an inserted skewer or toothpick comes out clean
- Cool on a wire rack, remove from pan and serve at room temperature
