Ingredients - Serves 6
- 1½ cups long-grain rice
- 3½-4 cups mixed vegetables, finely chopped (carrots, spring onion bulbs, green capsicum, red capsicum, green beans, cauliflower and green peas)
- 3-4 green chillies, finely chopped
- 4 tbsp soy sauce
- 4 tbsp oil
- 1½-2 tsp ground black pepper
- Salt, to taste
Steps
- Cook the rice separately
- Spread out on a large tray and let it cool
- Heat oil in a large wok. Fry all the vegetables on high heat for 3 minutes
- Add the green chillies and soy sauce and mix well. Cook for another minute
- Turn off the heat and add the rice, salt and black pepper
- Serve hot
