Plain Fried Rice

A plain vegetable fried rice that is generally served with a spicy gravy side
Ingredients - Serves 6
  • 1½ cups long-grain rice
  • 3½-4 cups mixed vegetables, finely chopped (carrots, spring onion bulbs, green capsicum, red capsicum, green beans, cauliflower and green peas)
  • 3-4 green chillies, finely chopped
  • 4 tbsp soy sauce
  • 4 tbsp oil
  • 1½-2 tsp ground black pepper
  • Salt, to taste
  1. Cook the rice separately
  2. An {electric rice cooker} can be useful
  3. Spread out on a large tray and let it cool
  4. Heat oil in a large wok. Fry all the vegetables on high heat for 3 minutes
  5. Add the green chillies and soy sauce and mix well. Cook for another minute
  6. Turn off the heat and add the rice, salt and black pepper
  7. Serve hot
