Ingredients - Serves 4-6
- 1 large (or 300 g) onion, chopped
- 1 large green capsicum (bell pepper), chopped
- 2-3 cloves (or 6 g) of garlic, chopped
- 3 medium-sized (or 300 g) tomatoes, chopped
- 1X400g canned black beans or ½ cup dried black beans, soaked overnight and cooked separately
- 1½ cups long-grain rice
- 3 tbsp extra virgin olive oil
- 3 cups water
- Salt, to taste
Steps
- Heat the oil in a large saucepan. Fry the onions and capsicum till they are soft
- Add the garlic and tomatoes and cook till the tomatoes become mushy
- Drain the beans and add to the pan along with the rice and water. Season with salt and bring to a boil
- Cover and cook till the rice is done
- Serve warm
