Moroccan Spiced Potato Pizza

Pizza topping of sliced potatoes cooked in a moroccan spiced sauce
Ingredients - Makes 1 medium pizza
  • 1 medium readymade pizza base or Basic Pizza Dough rolled out for 1 pizza
  • 1 large (or 300 g) potato, sliced thinly
  • 2 medium-sized (or 200 g) tomatoes, chopped
  • 1 small (or 100 g) onion, chopped
  • 1-2 cloves (or 4-6 g) of garlic, chopped
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground green cardamom
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1½ - 2 tsp red chilli flakes or red chilli powder, optional
  • 2 tbsp extra virgin olive oil
  • fresh coriander, chopped, optional
  • Salt, to taste
Steps
  1. Preheat oven to 180C/350F
  2. Heat the oil in a saucepan. Fry onions and garlic till the onions are soft and translucent
  3. Add tomatoes and all the spices. Mix well and cook till the tomatoes are soft and mushy
  4. Add the potatoes and cook covered till the potatoes are just done. They should still hold their shape
  5. Spread the potato slices over the pizza base, top with any remaining sauce and fresh coriander
  6. Bake in oven for 15-20 minutes or until the edges of the pizza base brown
  7. You can also use a {pizza oven} instead of the large regular oven
