Ingredients - Makes 1 medium pizza
- 1 medium readymade pizza base or Basic Pizza Dough rolled out for 1 pizza
- 1 large (or 300 g) potato, sliced thinly
- 2 medium-sized (or 200 g) tomatoes, chopped
- 1 small (or 100 g) onion, chopped
- 1-2 cloves (or 4-6 g) of garlic, chopped
- 1½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground green cardamom
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1½ - 2 tsp red chilli flakes or red chilli powder, optional
- 2 tbsp extra virgin olive oil
- fresh coriander, chopped, optional
- Salt, to taste
Steps
- Preheat oven to 180C/350F
- Heat the oil in a saucepan. Fry onions and garlic till the onions are soft and translucent
- Add tomatoes and all the spices. Mix well and cook till the tomatoes are soft and mushy
- Add the potatoes and cook covered till the potatoes are just done. They should still hold their shape
- Spread the potato slices over the pizza base, top with any remaining sauce and fresh coriander
- Bake in oven for 15-20 minutes or until the edges of the pizza base brown
You can also use a {pizza oven} instead of the large regular oven
