Ingredients - Serves 4
- 500 g avocadoes
- 200 g tomatoes
- 2 spring onions
- 2-3 fresh chillies
- juice of a lemon or lime
- a handful of fresh coriander, chopped
- Salt, to taste
Steps
- Remove the seeds from the avocadoes and chop up the flesh into chunks. Set aside
- Remove the seeds and pulp from the tomatoes and discard them. Cut the rest of the tomatoes into chunks. Set aside
- Chop the spring onions and grind them with the chillies, avocadoes and tomatoes
- Mix in chopped coriander, salt and lemon juice. Taste and adjust accordingly
- Serve immediately
