Guacamole

The ever-popular avocado dip - smooth, creamy and yummy!
Ingredients - Serves 4
  • 500 g avocadoes
  • 200 g tomatoes
  • 2 spring onions
  • 2-3 fresh chillies
  • juice of a lemon or lime
  • a handful of fresh coriander, chopped
  • Salt, to taste
Steps
  1. Remove the seeds from the avocadoes and chop up the flesh into chunks. Set aside
  2. Remove the seeds and pulp from the tomatoes and discard them. Cut the rest of the tomatoes into chunks. Set aside
  3. Chop the spring onions and grind them with the chillies, avocadoes and tomatoes
  4. Mix in chopped coriander, salt and lemon juice. Taste and adjust accordingly
  5. Serve immediately
