Ingredients - Serves 4
- 125 g plain flour
- 125 g butter, softened
- 125 g granulated white sugar
- 100 g roasted hazelnuts
- 25g blanched almonds
- 30 g cocoa powder
- 100 g dark chocolate or white chocolate
Steps
- Sift the flour and cocoa powder together into a bowl. Set aside
- Finely grind the hazelnuts, almonds and sugar. Mix with the softened butter
- Add the flour-cocoa mixture and gather into a dough. Don't mix too much
- Wrap the cookie dough in cling wrap and refrigerate for 30 minutes
- Preheat oven to 170C
- Roll out the dough on a lightly floured surface to a 1cm thickness. Cut out 2 cm circles and shape them into small balls
- Place the balls on a buttered baking sheet and bake for 12-15 minutes. Cool completely
- Melt the chocolate in the {microwave}. Let it cool slightly and when it is thick and ready to solidify, pour small amounts on half of the cookies on the underside. Sandwich the cookies and leave to set
Use a {food processor} with the dough attachment to make this step quicker
