Haloumi Wrap With Yoghurt-Garlic Sauce

A healthy lunch wrap filled with grilled haloumi cheese and veggies
Ingredients - Serves 3
  • 250 g haloumi cheese, cut into strips
  • ¼ cup green capsicum (green bell pepper), sliced
  • ¼ cup onion, sliced
  • ¼ cup tomato, sliced, remove pulp and seeds
  • ½ a lemon
  • ½ tsp red chilli flakes
  • ½ cup lettuce or green or red cabbage, shredded
  • ¼ cup carrots, grated
  • 3 plain or wholewheat wraps
  • For the sauce
  • 4 tbsp yoghurt, whisked till smooth
  • 1 tsp garlic, minced
  • 1 tsp fresh parsley, chopped
  • 1 tbsp extra virgin olive oil
  • Salt
  1. To make the sauce
    1. Mix all ingredients with water added as required
  2. To make the wraps
    1. Drizzle the haloumi strips with lemon juice, sprinkle with red chilli flakes and grill on all sides until slightly charred
    2. Spread a little sauce on each wrap, place the salad veggies off centre to one side and place a few haloumi strips on top. Drizzle more sauce and roll up the wraps, seal one end and serve
