Stir-Fried Cabbage With South Indian Spices
Ingredients - Serves 4
- 500 g green cabbage, shredded
- ½ cup green peas, optional
- ½ cup fresh coconut, shredded, optional
- 1-2 green chillies, finely chopped (adjust based on your spice/heat tolerance)
- 1 tbsp split chickpeas (chana dal)
- ½ tbsp black gram (urad dal)
- 1 tsp mustard seeds
- ½ tsp turmeric powder
- 2-3 dried red chillies, broken into small pieces
- 8-10 curry leaves, optional
- 3 tbsp oil
- Salt, to taste
Steps
- Heat the oil in a saucepan. Add split chickpeas (chana dal) and black gram (urad dal) and fry until slightly brown
- Add mustard seeds, curry leaves and dried red chillies and fry till the mustard seeds start to splutter
- Add the turmeric, chopped green chillies, green peas and cabbage. Sprinkle a bit of water, turn down the heat to low and cook covered till the cabbage is cooked to your liking. Make sure that there is no water left
- Add fresh coconut, turn off the heat, cover and leave it alone for 2 minutes
- Season with salt and serve hot with rice and optionally, a spoonful of ghee, or as a side salad
