Stir-Fried Cabbage With South Indian Spices

This recipe shows a simple and elegant way to cook green cabbage
Ingredients - Serves 4
  • 500 g green cabbage, shredded
  • ½ cup green peas, optional
  • ½ cup fresh coconut, shredded, optional
  • 1-2 green chillies, finely chopped (adjust based on your spice/heat tolerance)
  • 1 tbsp split chickpeas (chana dal)
  • ½ tbsp black gram (urad dal)
  • 1 tsp mustard seeds
  • ½ tsp turmeric powder
  • 2-3 dried red chillies, broken into small pieces
  • 8-10 curry leaves, optional
  • 3 tbsp oil
  • Salt, to taste
Steps
  1. Heat the oil in a saucepan. Add split chickpeas (chana dal) and black gram (urad dal) and fry until slightly brown
  2. Add mustard seeds, curry leaves and dried red chillies and fry till the mustard seeds start to splutter
  3. Add the turmeric, chopped green chillies, green peas and cabbage. Sprinkle a bit of water, turn down the heat to low and cook covered till the cabbage is cooked to your liking. Make sure that there is no water left
  4. Add fresh coconut, turn off the heat, cover and leave it alone for 2 minutes
  5. Season with salt and serve hot with rice and optionally, a spoonful of ghee, or as a side salad
