Macaroni Cheese

Creamy and full of flavour, our version will definitely wow adults and children alike!
Ingredients - Serves 6
  • 500 g or 5 cups macaroni pasta
  • 1 large (or 300 g) onion, chopped
  • ½ sundried tomatoes, sliced
  • ¼ cup jalapeños, chopped, optional
  • 2-3 (or 5 g) of garlic, chopped
  • 30 g butter
  • 1 litre milk
  • ¼ cup plain flour
  • 150 g cheddar cheese, grated
  • fresh parsley, chopped
Steps
  1. Bring a large pot of water to boil and cook the pasta according to instructions on the package
  2. In a saucepan, mix the sundried tomatoes, jalapeños, onion and garlic and fry till the onion is soft.
  3. Sundried tomatoes are generally sold in jars filled with oil, so there is no need to add any more oil while cooking
  4. Once the onions are soft, transfer everything into a bowl and set aside
  5. In the same pan, melt the butter and add the plain flour. Mix well and cook the flour for 1 minute
  6. While stirring continuously, slowly add the milk in a stream to make a sauce
  7. If there are any lumps in the sauce, use a regular {blender} or a {hand blender} to smooth it out
  8. On low heat, mix in the cheese and onion-sundried tomatoes mixture
  9. Turn off the heat and add the cooked pasta. Mix well and coat each pasta with the sauce
  10. Add chopped parsley and serve hot
