Stir-Fried Onion and Okra With South Indian Spices

A spicy and quick recipe using okra; this dish uses 'ulli kharam', literally onion and red chillies, which is a common spice paste used in Andhra (South Indian) cuisine
Ingredients - Serves 6-8
  • 1 kg okra (Indian ladyfingers), diced
  • 300 g onions, roughly chopped
  • 10-12 dried red chillies or 4-5 tbsp red chilli flakes
  • 1½ tsp cumin seeds
  • 6 tbsp oil
  • Salt, to taste
Steps
  1. Grind the onions, cumin seeds and red chillies together to form a coarse paste
  2. Heat the oil in a large pan and add the onion-chilli mixture
  3. Fry till it starts to brown and add the diced okra (Indian ladyfingers)
  4. Let cook on low-medium heat till the okra are completely cooked through
  5. Season well and serve hot with rice and a bit of ghee
