Stir-Fried Onion and Okra With South Indian Spices
Ingredients - Serves 6-8
- 1 kg okra (Indian ladyfingers), diced
- 300 g onions, roughly chopped
- 10-12 dried red chillies or 4-5 tbsp red chilli flakes
- 1½ tsp cumin seeds
- 6 tbsp oil
- Salt, to taste
Steps
- Grind the onions, cumin seeds and red chillies together to form a coarse paste
- Heat the oil in a large pan and add the onion-chilli mixture
- Fry till it starts to brown and add the diced okra (Indian ladyfingers)
- Let cook on low-medium heat till the okra are completely cooked through
- Season well and serve hot with rice and a bit of ghee
