Spaghetti Chilli Carbonara

A variation on the classic pasta with carbonara sauce
Ingredients - Serves 4
  • 400 g spaghetti or any other pasta
  • 8 egg yolks
  • ½ cup chopped green or red chillies (use large, mild ones)
  • 1 small (or 100 g) onion, chopped
  • 3-4 cloves (or 8 g) garlic, chopped
  • 3 tbsp extra virgin olive oil
  • ground black pepper
  • Salt, to taste
  1. Cook the pasta in a large pot of boiling salted water
  2. Beat the egg yolks till smooth. Season with salt and black pepper. Set aside
  3. Heat the oil in a pan. Fry the garlic and onions until soft
  4. Add the chillies and saute for 1 minute
  5. Toss in the cooked pasta, mix well and turn off the heat
  6. While the pan is still quite hot, pour in the beaten egg yolks and mix continuously. Add some water to thin out the sauce if you need to
  7. Serve immediately with grated parmesan
