Ingredients - Serves 4
- 400 g spaghetti or any other pasta
- 8 egg yolks
- ½ cup chopped green or red chillies (use large, mild ones)
- 1 small (or 100 g) onion, chopped
- 3-4 cloves (or 8 g) garlic, chopped
- 3 tbsp extra virgin olive oil
- ground black pepper
- Salt, to taste
Steps
- Cook the pasta in a large pot of boiling salted water
- Beat the egg yolks till smooth. Season with salt and black pepper. Set aside
- Heat the oil in a pan. Fry the garlic and onions until soft
- Add the chillies and saute for 1 minute
- Toss in the cooked pasta, mix well and turn off the heat
- While the pan is still quite hot, pour in the beaten egg yolks and mix continuously. Add some water to thin out the sauce if you need to
- Serve immediately with grated parmesan
